Our Story

Engineered in Nigeria, Built for Africa

From a small fabrication workshop in Ojo, Lagos, Ephonyx Nigeria Ltd has grown into one of West Africa's most trusted manufacturers of food processing machinery. Our journey reflects the resilience, innovation, and commitment to quality that defines Nigerian manufacturing excellence.

A Decade of Manufacturing Excellence

Ephonyx Nigeria Ltd was founded in 2014 with a clear mission: to reduce Nigeria's dependence on imported food processing equipment by building world-class machinery right here in Lagos. Our founder, an engineer with fifteen years of experience in agricultural mechanization, recognized that imported machines failed prematurely in Nigerian conditions because they were designed for stable European power grids, temperate climates, and technicians who could source spare parts locally.

The early years were challenging. We began in a five hundred square meter rented facility with three welders, one lathe operator, and a vision. Our first product was a modified cassava grater, built for a cooperative in Ogun State. The success of that machine taught us invaluable lessons about material selection, motor protection, and the importance of designing for maintainability.

By 2016, we had expanded into ginger processing equipment, responding to the booming demand from spice exporters in the Middle Belt and Southwest regions. Our brush-type washing machine became an immediate success because we used thicker gauge stainless steel than competitors and added a water recirculation system that appealed to environmentally conscious processors.

The meat cutting division launched in 2018 after extensive consultation with hoteliers and butchers across Lagos, Abuja, and Port Harcourt. They needed equipment that could handle tough African beef cuts, operate reliably in open-air markets, and be repaired by local technicians. Our gear-driven meat cutters answered every one of those requirements.

Today, Ephonyx operates from a three thousand square meter manufacturing facility in Ojo, Lagos, employing over forty skilled technicians, engineers, and support staff. We have delivered more than eight hundred fifty machines to twenty-five Nigerian states and exported to Ghana, Togo, and Cameroon. Our research and development department continuously tests new designs, materials, and automation features to keep our clients ahead of the competition.

Brush Type Ginger Washing and Peeling Machine Stage 1

Automatic Ginger Washing & Peeling Machine

The foundation of any profitable ginger processing operation begins with effective cleaning. Raw ginger arrives from farms encrusted with laterite soil, sand, stones, and organic matter that must be completely removed before any downstream processing can occur. Our automatic washing and peeling machine uses a dual-action cleaning system that outperforms manual washing by every measurable metric. The main chamber houses eight to fifteen cylindrical brushes mounted on a rotating shaft. These brushes are manufactured from food-grade nylon with carefully selected bristle stiffness that scrubs away soil and skin without damaging the tender flesh beneath. Overhead high-pressure nozzles deliver filtered water at optimized angles, dislodging particles and carrying them away through a sloped drainage floor. The machine features variable speed control, allowing operators to slow the brush rotation for delicate young ginger or increase speed for mature, tough-skinned roots. A water recirculation and filtration system separates heavy solids in a settling tank, allowing clean water to be pumped back to the spray nozzles. This reduces water consumption by approximately forty percent compared to single-pass systems, a critical advantage in regions where water costs are significant. The discharge end includes a mesh dewatering conveyor that shakes off excess moisture before ginger drops into collection bins or transfers directly to the slicer via an optional elevator conveyor. The entire frame, tank, and splash guards are fabricated from two-millimeter-thick 304 stainless steel, with all welds ground smooth to eliminate bacterial harborage points. Motors are sealed against moisture ingress and mounted externally to prevent corrosion. Available in four standard lengths to match your throughput requirements, from the compact eight-hundred-millimeter model suitable for village cooperatives to the industrial two-meter model serving export-oriented factories.

Industrial Ginger Slicing Machine Stage 2

Centrifugal Ginger Slicing Machine

Uniform slice thickness is the single most important determinant of drying efficiency and final product appearance. Irregular slices dry unevenly, resulting in some pieces burning while others retain excessive moisture that promotes mold. Our centrifugal slicer solves this problem permanently. The machine operates on a brilliantly simple principle: a rapidly spinning turntable generates centrifugal force that pushes ginger pieces against a stationary vertical blade assembly. Because every piece contacts the blade at the same velocity and angle, every slice emerges with identical thickness. The standard blade gap is set at two millimeters, ideal for drying applications, but can be adjusted from one to five millimeters by swapping blade cartridges. The cutting blade itself is made from hardened tool steel that maintains sharpness through approximately five hundred hours of operation before requiring resharpening or replacement. A critical design feature is the feed chute geometry, which orients ginger pieces radially so that long roots are cut across their width, producing round or oval slices that stack efficiently on drying trays. The machine body is cast aluminum with stainless steel contact surfaces, keeping weight low at forty-one kilograms while ensuring food safety. Safety features include a magnetic interlock on the feed hopper lid that prevents operation when open, and a thermal cutoff that protects the half-horsepower motor from overheating during continuous operation. The output chute directs sliced ginger into a perforated collection basket that allows initial drainage. For high-volume operations, an optional conveyor can transfer slices directly to the dryer infeed. Maintenance is deliberately simple: the blade cartridge removes with four thumb screws, and the turntable lifts out for cleaning without tools. The entire cleaning process takes less than ten minutes, minimizing changeover time between batches.

Ginger Blanching Machine Stage 3

Continuous Ginger Blanching Machine

Blanching is the critical thermal treatment step that inactivates polyphenol oxidase and peroxidase enzymes responsible for enzymatic browning. Without blanching, ginger slices darken within hours of cutting, rendering them unsuitable for premium markets. Our continuous blanching machine submerges sliced ginger in precisely controlled hot water for a programmable duration before cooling. The system consists of a stainless steel tank with submerged heating elements that maintain water temperature between eighty-five and ninety-five degrees Celsius. A mesh conveyor belt moves ginger through the tank at adjustable speed, ensuring every slice receives identical thermal treatment. The water is continuously circulated through a filtration system that removes starch and particulates released during blanching, keeping the bath clean between product changes. After the hot water bath, ginger transfers to a spray cooling section where ambient temperature water rapidly reduces the product temperature to below forty degrees Celsius. This stops the cooking process and prevents over-softening that would make slices difficult to handle during drying. The cooling water is also recirculated through a heat exchanger. For clients who process organic ginger, the machine can be configured to use steam injection instead of direct heating elements, eliminating any risk of localized overheating. The control panel displays real-time water temperature, belt speed, and throughput rate. An optional pH monitoring system can be added for clients who acidulate their blanching water to further enhance color retention. The machine is constructed entirely of 304 stainless steel with hinged access panels for internal cleaning and inspection.

Ginger Drying Oven Stage 4

Hot Air Circulation Ginger Drying Oven

Drying transforms perishable fresh ginger into a stable commodity with a shelf life exceeding twelve months when properly stored. Our hot air circulation drying oven uses a sophisticated dehumidification system that removes moisture quickly without scorching the delicate volatile oils that give ginger its commercial value. The cabinet contains twenty-four perforated stainless steel trays arranged on rolling racks. A powerful centrifugal fan forces heated air through a duct distribution system that ensures uniform airflow across every tray. The heating elements are sheathed in stainless steel and positioned outside the drying chamber to prevent direct radiant heat from contacting product surfaces. Temperature is controlled by a precision thermostat with one-degree resolution, typically set between fifty and sixty degrees Celsius for ginger slices. A programmable humidity sensor activates exhaust dampers when chamber humidity exceeds the setpoint, drawing in fresh dry air while expelling moist air. This active humidity management reduces drying time by thirty percent compared to passive convection dryers. The cabinet walls are insulated with fifty-millimeter rock wool sandwiched between stainless steel inner and outer skins, minimizing heat loss and keeping exterior surfaces safe to touch. An interior light allows visual monitoring without opening the door. The standard batch capacity is sixty kilograms of fresh slices, which typically dries to twelve kilograms of finished product over eight to twelve hours depending on initial moisture content. For continuous operations, multiple ovens can be staged so that one is being loaded while others are in mid-cycle or cooling. All internal corners are radiused to prevent product accumulation and simplify sanitation.

Ginger Powder Grinding Machine Stage 5

Universal Ginger Powder Grinding Machine

The final transformation from dried ginger slices to fine powder represents the highest value addition in the processing chain. Our universal grinder uses a high-speed rotating hammer assembly within a precision-machined crushing chamber to pulverize dried ginger into particles ranging from coarse ten-mesh granules to ultra-fine one-hundred-twenty-mesh powder suitable for pharmaceutical and beverage applications. The eleven-kilowatt motor drives the hammer rotor at three thousand eight hundred revolutions per minute, generating impact forces that shatter the fibrous ginger tissue. A mesh screen surrounding the hammer assembly determines final particle size; screens are interchangeable and available in ten standard sizes. The machine features an air-cooled design that draws ambient air through the grinding chamber, preventing heat buildup that would degrade gingerol and other heat-sensitive compounds. A cyclone separator at the discharge point collects powder in a sealed container while exhausting air through a fabric filter that captures any fine dust. The entire grinding chamber, hammers, and screens are 304 stainless steel. The feeding hopper includes a magnetic grate that traps any ferrous contamination before it enters the grinding zone. For safety, the machine cannot start unless the discharge chute and filter bag are properly seated, and an overload relay protects the motor from jamming. The grinder is equally effective on turmeric, garlic, pepper, and other spices, making it a versatile investment for diversified processors. Routine maintenance involves periodic screen replacement, hammer inspection for wear, and lubrication of the drive bearings every five hundred operating hours.

Vibrating Sieve and Packaging Stage 6

Vibrating Sieve & Powder Packaging System

After grinding, ginger powder must be classified into uniform particle size fractions and packaged in a contamination-free environment. Our integrated sieving and packaging line begins with a circular vibrating sieve that separates powder into coarse, medium, and fine fractions using stacked mesh screens. The vibratory motion is generated by an eccentric weight motor that creates a three-dimensional gyratory movement, causing particles to spiral across the screen surface until they either pass through or discharge at the periphery. Oversized particles are returned to the grinder for reprocessing. The classified powder then flows by gravity into a semi-automatic packaging machine that weighs precise quantities into polyethylene bags, foil pouches, or rigid containers. The weighing system uses load cells with 0.1-gram resolution, programmable for any target weight from fifty grams to five kilograms. Once the target weight is reached, the filling chute closes and a heat-sealing jaw hermetically seals the package. Date coding can be integrated into the seal area. The packaging machine handles both pillow bags and gusseted stand-up pouches. For bulk export orders, an optional auger filler can deposit powder into twenty-five-kilogram woven polypropylene sacks with inner polyethylene liners. The entire line is enclosed in a dust containment hood with negative air pressure and HEPA filtration, protecting operators from respiratory exposure and preventing cross-contamination between batches. All contact surfaces are 316L stainless steel for maximum corrosion resistance to ginger acids.

Frequently Asked Questions: Ginger Processing

Common questions from prospective ginger processors, answered by our engineering team.

What is the total power requirement for a complete ginger processing line?
A complete commercial line including washing, slicing, blanching, drying, grinding, and packaging typically requires fifty-five to sixty-five kilowatts of three-phase power. However, individual machines can be configured for single-phase operation where three-phase supply is unavailable. We also offer diesel generator compatibility packages and solar-hybrid options for off-grid locations.
How much fresh ginger is needed to produce one kilogram of ginger powder?
Fresh ginger contains approximately eighty to eighty-five percent moisture. After washing, peeling, and drying, the yield is typically eight to ten kilograms of fresh ginger per one kilogram of dried slices. After grinding and sieving losses, expect a final powder yield of nine to eleven percent by weight of fresh input. Therefore, one metric ton of fresh ginger yields approximately ninety to one hundred ten kilograms of fine ginger powder.
Can the machines process turmeric, garlic, and other spices?
Yes. Our washing machine handles turmeric, carrots, potatoes, and root vegetables with simple brush changes. The slicer accommodates turmeric fingers and garlic cloves with minor chute modifications. The grinder and dryer are universal machines that process any spice requiring size reduction or moisture removal. We offer conversion kits for clients who process multiple products seasonally.
What training is provided for machine operators?
Every machine sale includes comprehensive operator training covering safety protocols, startup and shutdown procedures, routine cleaning and sanitation, blade replacement, screen changes, and basic troubleshooting. Training is conducted at your facility during installation and typically requires two to three days. We also provide illustrated operation manuals in English and can arrange training in Hausa, Yoruba, or Igbo upon request.
How do I maintain food safety standards with this equipment?
All our ginger processing machines are designed with sanitation as a primary consideration. Smooth welded seams, sloped surfaces that drain completely, and quick-release components allow thorough cleaning after every batch. We recommend a documented cleaning schedule including pre-rinse, caustic wash, acid rinse, and final sanitizer application. Our team can assist in developing a HACCP-compliant sanitation protocol tailored to your facility layout and product mix.
What is the delivery timeline for a complete processing line?
Standard machines from our Lagos inventory can be delivered within seven to fourteen days for Lagos-based clients and fourteen to twenty-one days for interstate deliveries. Commercial Meat Cutting Machine Best Seller

Commercial Meat Cutting Machine (750W)

The workhorse of Nigerian commercial kitchens, this tabletop meat cutter transforms the most time-consuming prep task into a rapid, repeatable process. The seven hundred fifty watt motor, operating at fourteen hundred revolutions per minute, drives two counter-rotating three-and-a-half-inch blades through a gear transmission with zero plastic components. This all-metal powertrain is the critical difference between our machine and cheap imports that fail when plastic gears strip under load. The input chute measures two inches by three and three-quarter inches, accommodating thick boneless cuts of beef, chicken breast, pork loin, and even venison backstrap. The output is uniform strips or slices depending on blade spacing, with standard configurations at one-quarter inch and one-half inch thickness. The stainless steel body resists corrosion from meat juices and cleaning chemicals, while the rubber anti-vibration feet keep the machine stable during operation. A front-mounted emergency stop paddle allows immediate shutdown if foreign objects enter the chute. The cutting blades are removable without tools for sharpening or replacement, and the comb inserts that prevent meat jamming lift out for thorough cleaning. At two hundred fifty kilograms per hour capacity, this single machine replaces the output of three skilled butchers working with manual knives. The compact footprint fits standard kitchen prep tables, and at thirty-eight kilograms it can be moved for cleaning or storage.

Heavy Duty Meat Strip Cutter Industrial

Heavy Duty Meat Strip Cutter (1.5HP)

When production volume exceeds the capacity of tabletop units, our heavy-duty floor-standing strip cutter delivers industrial throughput with commercial kitchen convenience. The one-and-one-half horsepower motor develops sufficient torque to process frozen meat partially thawed to minus-five degrees Celsius, a critical capability for large operations that receive bulk frozen imports. The transmission is one hundred percent gear-driven with hardened steel shafts running in sealed ball bearings, eliminating belt slippage and maintenance. Blade options range from one-eighth inch for fine shredding to one inch for thick kebab strips, with custom spacings available for specific menu requirements. The input hopper is enlarged to accept whole subprimal cuts up to four inches thick and eight inches wide, reducing the need for pre-portioning. A pneumatic hold-down arm keeps meat aligned during cutting, improving consistency and operator safety. The discharge conveyor transfers cut strips directly into marinade bins or packaging trays, minimizing handling. All external panels are brushed 304 stainless steel, and the cutting chamber is 316L stainless for maximum resistance to salt and acidic marinades. The machine includes a magnetic safety interlock on the hopper lid and a thermal overload relay with automatic reset. At five hundred kilograms per hour, this machine serves hotel central kitchens, catering companies, and industrial meat processors who cannot afford downtime during peak production.

Meat Slicing Machine New

Precision Meat Slicer for Deli & Bacon

While strip cutters excel at portioning muscle meat, certain applications require thin, uniform slices. Our precision meat slicer uses a large diameter rotating blade and automatic carriage feed to produce paper-thin to thick-cut slices of cured meats, bacon, ham, and deli products. The blade is hollow-ground carbon steel with a serrated edge option for crusty cooked meats. Slice thickness is controlled by a micrometer-adjustable plate with digital readout, ensuring every slice matches the selected dimension from one millimeter to twenty-five millimeters. The automatic carriage moves back and forth at variable speed, gripping meat with a spiked holder that prevents slippage. A built-in blade sharpener maintains the edge between professional sharpenings, extending blade life by forty percent. The machine is particularly popular among hotels that operate breakfast buffets, as it produces attractive bacon slices that cook flat without curling. For suya vendors, it creates thin sheets of marinated beef that dry quickly on skewers over charcoal. The aluminum alloy body keeps weight manageable while stainless steel food contact surfaces ensure hygiene compliance. A ring guard surrounds the blade perimeter, and the carriage cannot operate unless the guard is in place.

Meat Grinder Mincer

Industrial Meat Grinder & Mincer

For processors producing ground meat, sausages, meatballs, and kofta, our industrial meat grinder provides the particle size control and throughput necessary for consistent product quality. The auger-driven feeding system pulls meat into a rotating helical screw that forces it through a perforated plate against a stationary knife. Plate hole sizes range from three millimeters for fine emulsions to twenty-five millimeters for coarse chili meat. The one-horsepower motor drives the auger through a reduction gearbox, developing tremendous torque that prevents jamming even with sinewy cuts. The head assembly, auger, knife, and plates are all 304 stainless steel and remove without tools for cleaning and plate changes. A tray-mounted stomper allows safe pushing of meat into the feed throat, while a reverse switch clears jams without disassembly. The machine includes a sausage stuffing attachment with four horn sizes, enabling immediate conversion from grinding to stuffing without additional equipment. A built-in circuit breaker protects the motor from overload, and sealed bearings require no lubrication for the life of the machine. The grinder can process approximately three hundred kilograms per hour of chilled boneless meat, making it suitable for medium-scale sausage factories and meatball producers.

Meat Processing Best Practices

Maximize yield, equipment lifespan, and food safety with these operational guidelines developed through years of field experience.

Meat Temperature Control

Always process meat at zero to four degrees Celsius. Warm meat smears rather than cuts cleanly, causing protein buildup on blades and reducing portion definition. For frozen meat, temper to minus-five degrees Celsius before cutting; fully frozen meat damages blades and motors.

Blade Maintenance Schedule

Inspect blades daily for nicks and dulling. A dull blade tears rather than shears, generating heat that cooks meat surfaces and accelerates bacterial growth. Sharpen or replace blades every two hundred operating hours for the MC750, or when cut quality visibly degrades.

Sanitation Protocol

Disassemble and clean all meat contact surfaces after every production shift. Use hot water above eighty-two degrees Celsius with food-grade alkaline detergent. Sanitize with quaternary ammonium or chlorine solution at manufacturer-recommended concentration. Allow to air dry completely before reassembly.

Yield Optimization

Cut across the grain for tender strips, and with the grain for chewy suya-style portions. Trim external fat before cutting to prevent blade clogging. Save trimmings for grinding rather than discarding; our grinder converts trim to profitable mince.

Meat Processing FAQ

Answers to common questions about meat cutting equipment in the Nigerian context.

Can these machines cut bone-in meat?
No. All our meat cutters are designed exclusively for boneless cuts. Attempting to process bone-in meat will damage blades, void warranties, and create metal contamination risks. For bone-in portioning, we recommend consulting our partner network for band saw solutions appropriate for your scale.
How noisy are the machines during operation?
The MC750 operates at approximately seventy decibels, comparable to a vacuum cleaner. The MC1500 industrial unit reaches seventy-eight decibels during heavy cutting. Both levels are within occupational safety limits for eight-hour exposure, but we recommend positioning cutters away from dining areas in open-kitchen restaurants. Anti-vibration mounts are included to reduce structure-borne noise.
What happens if my machine breaks down?
Ephonyx maintains a technical support hotline operational during business hours. For warranty issues, our technicians aim to respond within forty-eight hours in Lagos and seventy-two hours for interstate clients. We stock replacement blades, bearings, switches, and motors at our Lagos depot. Most common failures can be resolved on the first visit. Extended warranty and preventive maintenance contracts are available.
Can I get custom blade spacing for specific dishes?
Absolutely. While we stock standard one-quarter inch and one-half inch blade sets, we can fabricate custom combs and blade spacers for any thickness from one-sixteenth inch to two inches. Custom orders require two weeks additional lead time and a modest tooling fee. Many of our hotel clients order multiple blade sets to switch between breakfast bacon, lunch stir-fry, and dinner kebab preparations.
